Amazingly Easy Crockpot Taco Soup

Tacos are beloved for their crunch, spice, and versatility. But have you ever successfully eaten a taco without making a huge mess? Enter crockpot taco soup—the savory, hearty, and utterly delicious creation that marries the essence of tacos with the warmth of a comforting soup. This delicious recipe is an easy meal, perfect for taco Tuesday, busy weeknights or a warm weeknight meal.

The thing I love most about this meal is it’s AMAZING flavor. My second favorite thing is how incredibly easy it is to make.  Just cook the meat and onions, and everything to a crockpot and let it cook for 6-8 hours.  It feeds a ton of people too, making it great for parties or leftovers.

Crockpot

Ingredients in this recipe:

  • 1 pound ground beef, ground turkey or ground venison
  • 1 onion, chopped
  • 1 can of corn, undrained
  • 3 cans chili beans or kidney beans (Brooks or Bush’s work great)
  • 1 can Rotel (diced tomatoes and green chilies)
  • ​2 cans petite diced tomatoes
  • 1 Tbs Chili powder
  • Ranch dressing mix (the dry powder)
  • Small can of tomato sauce
  • 2 Tbs taco seasoning (I have a great homemade taco seasoning recipe)

Toppings

  • Fritos, tortilla chips or tortilla strips
  • Sour cream
  • Fresh cilantro
  • Shredded cheddar cheese
  • Avocado

Steps for Crockpot Taco Soup:

  1. In a large skillet, you’re going to brown your ground meat and onion on medium-high heat. Drain the excess grease and add the meat to the crockpot.
  2. Add the remaining ingredients. Stir to combine and cook on low for 6-8 hours or on high for 3-4 hours.

Some helpful hints:

  • If your soup is too thick, you can add some chicken broth or beef broth.
  • You can stop leftovers in an airtight container for about a week.
  • You can also cook this recipe in a large pot for about 30-45 minutes.
