The tenderness of the pork loin roast, when marinated in a concoction of brown sugar and cajun seasoning, transformed into something that not only tantalized the taste buds but also had my kids and my husband asking for seconds. I added bacon to the exterior to help flavor the meat as well as give it an extra boost of deliciousness. Honestly, what is better than bacon?

Simple Ingredients for Bacon-Wrapped Pork Loin

  • 3 pound pork tenderloin
  • 2 Tbs oli of choice
  • 2 tablespoon Cajun seasoning
  • 4 tablespoon brown sugar
  • Salt and black pepper to taste
  • 8 strips bacon strips (I used thick cut bacon)
  • 6 tablespoons apricot preserves
  • 2 tablespoon grainy dijon mustard
  • Extra preserves and dijon mustard for serving

Preparing Your Pork Loin

Crafting the spice rub for any pork recipe is an art in itself. For this meal, I blended salt, pepper, sweet brown sugar with spicy Cajun seasoning. Every granule of sugar promises a balance to the savory depth of Cajun spices. I then rubbed the mixture over the entire pork loin. Next, I prepare the bacon wrap, wrapping the strips of bacon tightly around the loin, ensuring that the end of one slice is covered by the end of the next.  I will be the first to admit that keeping the bacon wrapped around the loin while it cooks is the most difficult part of the entire process.

Cooking to Perfection

I started by preheating my oven to the 400 degrees F, a crucial step to ensure the meat cooks evenly. I then sprayed a large baking dish with nonstick cooking and set it aside.

I heated the oil in a large skillet on medium-high heat and placed the bacon-wrapped pork loin on the oil.  I used tongs to rotate the loin, attempting to keep the bacon in place and ensuring that all sides of the loin were cooked. I did this for approximately 15 minutes.

I then transferred the meat to the baking dish and cooked if for approximately 25 minutes in the preheated oven.  Ovens are different, so I recommend using a meat thermometer to ensure an internal temperature of 140 degrees F.

As the pork baked, I mixed the apricot preserves and dijon mustard together.  When the meat was 5 minutes from being done, I used a pastry brush to brush the apricot mix over the meat.  Once the meat was done, I let it sit and rest for 5 minutes before serving.  You do not need to use aluminum foil for the rest period.  Use a cutting board to slice the meat, and serve with extra apricot glaze on top.
