This crockpot salsa chicken is ridiculously easy to make and so good. It takes only a few ingredients and about 4-6 hours in the crockpot and you end up with a family-pleasing meal idea that well be asked for repeatedly.

I have mentioned this a million times, but I LOVE my crockpot. Seriously. I don’t think it’s just mine either. I love the entire premise behind them. Put stuff in it, turn it on and pray it doesn’t burn the house down. Just a few hours, you have a warm, delicious meal.

What’s not to love about a crockpot?

I use this one. It cooks things really well. Too well, if fact. I have learned to cook all recipes on low for 4 hours or keep warm for 6 hours.

I’d never use the high setting, because I’m pretty sure someone in my home would end up too-closely resembling Jack Pearson.

You dump the drained beans, corn and tomatoes in the bottom of the crokpot. Put the chicken on top and cover it in salsa. Cook on low for 6 hours of high for 4 hours (unless you have a fickle crockpot, then cook accordingly). That’s it. It’s seriously a super easy recipe that yields delicious chicken.

A few things notes about salsa chicken

You can cook this recipe in the oven instead of the crockpot. Just use a 9×13 greased baking dish and cook at 375 degrees F for 45-60 minutes until cooked through (internal temp of 165 degrees F)

I used Pace Chunky Medium Salsa, but you can use whatever salsa you like.

This recipe can be served over rice (or cauliflower rice), in tacos or over lettuce as a salad.

Ingredients

  • 2 (15 oz) cans corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can petite diced tomatoes, drained
  • 1 cup salsa divided
  • 1 tsp minced garlic
  • ½ teaspoon cumin
  • 2 lbs. boneless, skinless chicken breasts
  • Salt and pepper to taste

Instructions

  1. Spray crockpot with cooking spray
  2. Pour cans of drained corn, beans and tomatoes in bottom of crockpot
  3. Place chicken on top
  4. Spread salsa over chicken
  5. Cook on high 4 hours on on low 6 hours (to internal temp of 165 degrees F)
  6. Enjoy
