Have you ever had a late realization that you need a delicious baked good?  Bake sale the next day? Special event that warrants dessert? Middle of the night craving?  These EGGLESS SUGAR COOKIES are just the right amount of sweet and are SUPER EASY to make.

I’ve made this sugar cookie recipe so many times I’ve lost count.  One of the best things about these sugar cookies is you can add just about anything to them.  I make them into chocolate chip cookies all the time. They come out soft and chewy every single time.

I used my KitchenAid Mixer for this recipe. I love this mixer so much. It’s a little heavy, but worth it because I don’t have to hand mix things unless I want to.

Frequently Asked Questions

My Sugar cookies came out raised.  Is this normal?

The eggless sugar cookies come out of the oven a little dome shaped, so I flatten them out a little with a spatula.  They may flatten out on their own, but I’m impatient so I just smush them myself.

Can you substitute almond or coconut flour?

I have tried substituting almond flour in the recipe at a 1:1 ratio and it was disastrous.  Almond flour is too gritty, or at least the brand I have is. It also tastes away from the sweetness of the sugar.  It is not recommended for eggless sugar cookies.

I have not tried coconut flour.  The ratio is not 1:1, but coconut flour is much finer so it shouldn’t have the gritty texture that almond flour has.  If you try it, let me know.

Did you know there are no eggs in this Sugar cookie recipe?

Yes, that’s on purpose.  This recipe is designed to be baked without eggs.  It does not affect the deliciousness at all 🙂

Also, you can eat this dough without fear. Especially if you add chocolate chips 🙂 Who doesn’t like raw cookie dough??

  1. Very salty and crumbly. Did not spread out so stayed too thick and doughy in the middle. No vanilla?

    • Sorry yours didn’t turn out. I’ve never had them turn out crumbly. Maybe different baking times related to different ovens? I don’t know.

You can absolutely add vanilla. I never have, but I’d imagine it would only make them more delicious.
