This low carb cheesy ranch chicken recipe was a product of my own imagination, I’m very proud to say. It took minimal time to prepare and contains things most people already have on hand.
When I am cooking, you can usually find a recipe in front of me. I google “chicken dinner recipes” or “easy pork chop recipes for the crockpot”, find a good looking recipe and go to work.
Tonight I made an EASY low carb chicken recipe all on my own. The spawn, both of whom have VERY loud opinions about my meals most nights (ask them how they feel about pineapple chicken), ate 2 HELPINGS EACH, and would have eaten more if I hadn’t beaten them away with a spoon.
Ok, I didn’t really do that. I did have to tell them no, though, because if I’d kept feeding them, Josh and I wouldn’t have seen dinner tonight.

Low carb, cheesy Ranch chicken has 6 ingredients, most of which people already have at their house. This means you don’t have to make a special trip the store for this easy ranch chicken recipe.
This recipe contains ingredients that most consider “healthy”. It’s also low carb.
While it does contain a can of store-bought cream of celery soup, you can always use homemade if you are looking for a healthy alternative. Personally, I love Campbell’s.
This recipe makes 3 servings and each serving has 340 calories and about 5 carbs.
Like I said, my kids (who are the advisors to any and all menu items at my house) loved it. 2 servings worth of loved it. My husband and I did too, but let’s be honest. The kids are all that matters when it comes to food.
This can easily be turned into an even easier crockpot cheesy chicken recipe. Just get your favorite pot and spray it with cooking spray. Put the chicken in it. Mix everything except the cheese in a bowl and pour that on top. Cook it on high for about 4 hours or low for about 6 hours. Top with cheese.
Seriously, how easy is that? Quick crockpot recipes have my heart.

Things I used in this cheesy low carb chicken recipe.
- 3 chicken breasts, cut into strips
- 1 packet Kraft Ranch dressing mix
- 2 Tbs sour cream
- 2 Tbs mayonnaise
- 1 can Cream of Celery soup
- 1 cup shreddedd cheddar cheese
- Preheart oven to 400 degrees and grease a 9x13 pan.
- Place chicken in pan.
- Mix all remaining ingredients except cheese together. Spoon onto chicken.
- Sprinkle cheese on top.
- Cover with aluminum foil and bake for 20 minutes or until chicken is cooked through.
- Let cool for a few minutes then enjoy.
