There are desserts, and then there’s the  Next Best Thing To Robert Redford dessert.  This legendary treat has been around for ages, but I had never heard about it until my husband suggested I make it for a holiday dessert.  I still have no idea how he knew it was a thing, but I digress.

If you’re asking “but WHO is Robert Redford”, I’m not sure we should continue.  I’m kidding. 

Robert Redford is movie star whos career started back in the 1960s.  He’s been in some CLASSIC films, including but definitely not limited to:

  • The Iceman Cometh
  • Butch Cassidy and The Sundance Kid
  • A River Runs Through It
  • The Last Castle

He’s known for his good looks.  I mean, come on…..  He’s up there with George Clooney and Brad Pitt for me.  Well, old RR anyways.

I love easy dessert recipes.  If this one doesn’t strike your fancy, I have others up on my blog.  They all feature simple ingredients and easy steps.  They are perfect for birthdays, family reunions, holiday parties or just days that end in Y.

The ingredients for Next Best Thing To Robert Redford Dessert include:

  • 1 ¼ cups all-purpose flour
  • 10 tablespoons butter, melted
  • 1 cup finely chopped pecans or walnuts
  • 8 oz pkg cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 16 ounces whipped topping (2 8-ounce containers), like Cool Whip
  • 5.1 ounces instant vanilla pudding mix
  • 5.9 ounces chocolate fudge instant pudding mix
  • 3 cups cold milk
  • ¼ cup grated semi-sweet chocolate bar
  • additional finely chopped nuts, for garnish (optional)

Steps:

  1. Preheat the oven to 350 degrees F and grease a 9×13 baking dish.
  2. The bottom layer is the crust. Mix flour, melted butter and pecans together, mixing them well.  Press mixture into the bottom of the baking dish.  Bake this for 15-20 minutes until golden brown then let cool.
  3. The second layer is the cream cheese layer.  Mix cream cheese, powdered sugar, and vanilla with an electric mixer (or a stand mixer if you don’t have a hand mixer).  Once combined, add the whipped topping and stir to combine.  Pour this on top of the first layer.
  4. The next two layers are made with choolate and vanilla boxed pudding mixes.  In a medium bowl, mix the chocolate pudding mix with 1 3/4 C milk. Repeat with the chocolate pudding.  Whisk to combine and let the puddings set.  Once they are set, Add first the chocolate pudding layer then the vanilla pudding layer.
  5. The next layer is the whipped topping.  Sread the layer of whipped topping over the puddings.  Lastly, you can top the dessert with chocolate chips, grated chocolate, chocolate curls if you are fancy, or crushed pecans.
